Purple Carrot review: Ginger Lemongrass Noodles with Coconut Broth & Sriracha Tofu

A++ to this fantastic Purple Carrot recipe – my favorite so far this year. It’s a rich, savory coconut broth flavored with lemongrass, ginger, garlic, and lime, filled with rice noodles and topped with spicy sriracha tofu. Yum!

Another thing I liked about this recipe was the convenient ability to multi-task. Here you can see I am cooking the rice noodles, sauteeing the sriracha tofu, and simmering the coconut broth, all simultaneously so that it gets done faster.

Watching the tofu brown and the sriracha absorb into it was a thing of beauty. The cast iron pan ensured that nothing stuck to the pan and the delicious goodness stayed on the tofu.

And… voila! Take the broth off the heat, add the fresh lime juice, and combine. Delicous!
